Construction Nears Completion for Oregon's First Jollibee in Hillsboro

Oregon's eagerly awaited first Jollibee location is nearly ready to serve the community. The Filipino fast food chain’s restaurant in Hillsboro’s Tanasbourne Village, located at 1951 N.W. 185th Ave., is in the final stages of construction. While an official opening date has yet to be confirmed, a brand representative has indicated that the restaurant is expected to launch in early 2025.
“Jollibee is thrilled to see the excitement for its new Tanasbourne location and looks forward to sharing the joy of eating with the community,” the representative said in a statement to the News-Times.
Signage on the building is already teasing the chain's diverse and delicious menu, which combines Filipino specialties with fast food favorites. Alongside their famous crispy fried chicken and cheese-topped burgers, Jollibee also offers sweet spaghetti—an iconic Filipino dish topped with hot dogs—and palabok, a garlicky noodle dish that includes egg, shrimp, and ground pork.

The arrival of Jollibee in Oregon is a big deal for local foodies and Filipino food enthusiasts. It’s been a long time coming, with news of Jollibee’s planned Hillsboro location breaking back in 2022. The new location will take over the spot once home to Chevys Fresh Mex, which closed its doors in 2021.
Jollibee has become an international sensation, with more than 1,500 locations worldwide. In North America, the brand has grown rapidly, now boasting over 100 restaurants across the United States and Canada. Its expansion has been met with excitement, especially in areas like the Pacific Northwest, where Filipino cuisine has been gaining popularity.
For those unfamiliar with Jollibee, the Filipino fast food chain offers an experience unlike traditional fast food spots. Their menu goes beyond the ordinary, bringing the flavors of the Philippines to fast food lovers, offering everything from Chickenjoy (their signature fried chicken) to Jolly Spaghetti, which is characterized by its sweet, ketchup-based sauce and a mix of savory meats.
Jollibee’s entry into Hillsboro marks a key moment in the brand’s ongoing expansion, as it continues to captivate new audiences with its unique fusion of fast food and Filipino culture.
As the restaurant nears its grand opening, locals are already buzzing with anticipation. Fans of Jollibee in the region are excited to finally have a chance to experience the food that has made the chain a hit across the globe.
